My aunt used to make a delicious cheese and squash casserole. I even liked the squash, let alone the cheese and sauteed onions. I tried to cook some squash myself, and undercooked it, figured that must be what ivory soap tastes like.
Fried okra is one of my less fond memories, slimy and greasy and I weren't agonna eat it.
I got my little butt spanked for that one but I didn't eat the okra.
Funny though my mom canned corn, okra and tomatoes. That was some good eating, lottsa butter and a bit of salt. The thing was the okra was fresh and a little crunchy and it tasted great.
I guess preparation is the key.

How about something we are all familiar with, bitterguard?
Yeah, okra's got all those weird little seeds in it.
And yeah, squash is what they wean you with (proto-food at best).
Then there's swiss chard--eek!
